Summer bearing raspberries – first to the plate

July 19 is ice cream day!

This time of year, one of my daily chores is to tend to the berries. I’m pleased to say that our original summer-bearing raspberry patch, which has been dormant for the last two years, is bearing fruit this year! Our marionberries, blueberries, and new-this-year-boysenberries are also starting to come in. All kinds of local pollinators love berries. Adding perennial fruit bearing plants to your urban garden is one easy way to help out local pollinators!

Easy Raspberry Ice Cream

Homemade berry ice cream is a crowd favorite any time of year. From work parties, to family celebrations, to an everyday treat, this super-easy recipe is my go-to when I want to share something special with my special-someones. The recipe turns out great results using fresh or frozen berries.

  • 2 cups berries (fresh or frozen – Raspberries are my favorite for this recipe)
  • 1 cup sugar
  • 2 cups heavy whipping cream
  • 1 cup half-and-half
  • 1 tsp vanilla extract
  • 1/2 cup semi-sweet chocolate pieces (mini chocolate chips)
  1. Add sugar and whipping cream to blender and blend on high for about 2 minutes. The mixture will thicken slightly.

  2. Add berries, half-and-half, and vanilla to blender. Blend for about 1 minute on high until smooth.

  3. Pour mixture into a frozen dessert maker, following manufacturer's directions.

  4. Add in chocolate chips and stir, just until combined.

  5. Transfer the frozen berry goodness to a 2-quart freezer-safe container. Freeze for several hours before serving.

  • Serve on a cone, especially for parties for no-fuss clean up!
  • Choose a tart berry. My favorite is raspberry and it goes perfect with a the little bits of chocolate!
